It was Carlo Moro who gave life to the pasta factory in 1868 in Chiavenna on the river Mera, where its waters provided the necessary power for the factory’s grinding machines. The factory was constructed with the typical dedication and craftsmanship of the local people. Their vision endures at the original location which is now an industrial museum, “Mulino di Bottonera”. Today the Moro’s new state-of-the-art establishment, using 100% green energy to power its operation, resides at the main gates of the city of Chiavenna, 10 Km from nearby Switzerland, on the road towards the Spluga Pass and St. Moritz. After 150 years, the descendents of Carlo Moro still produce and sell their buckwheat pastas made today as they were years ago.
Buckwheat is nutritious – it is rich in iron, vitamin B, vitamin E, and minerals, especially magnesium. Buckwheat is high in fiber and contains essential amino acids, especially lysine and tryptophan. The protein value of buckwheat is similar to that of meat and soy. Pasta made from buckwheat contains less carbohydrates and more fiber than regular pasta.
These pastas contains durum wheat and buckwheat flour. They are not gluten-free.
