La Campofilone is a small agricultural town overlooking the Adriatic Sea, in Le Marche region of Central Italy. It is also the birthplace of Maccheroncini. The durum wheat semolina is produced in a local mill. It is extracted from the heart of the wheat using only the central part of a single grain. In addition to providing firmness during cooking, this gives the pasta an elevated gluten index.
